I love corn on the cob. With lots of butter and lots of salt. Mmmm! Not that you'll EVER get tired of plain ol' corn on the cob, but here's a simple and DELICIOUS way to shnazzz it up a bit. Impress your neighbors..and your taste buds. Did I mention it's delicious?? Just checking..
Soak the corn in the husk in cold water for 10 minutes.
Fire up the grill and cook in the husk for about 10 minutes.
Rotate it and all that jazz, until it looks like this.
Shuck the corn (shuck is such a weird word to me, by the way) and put back on the grill for around 10 minutes.
Until it's nice and cooked. Yum.
Here's where things get crazy. Take some mayonnaise (for two ears, I used about 1/4 cup -- but you really don't need to measure) and sprinkle in a couple dashes of cayenne pepper. Mix it together. Don't go crazy with the cayenne pepper. A little goes a long way. It all depends on how much kick you want it to have. Taste the mixture and see if it needs a little more. Brush your mayo/cayenne pepper mix on the corn. All over...be generous and be messy.
Sprinkle Feta cheese on the corn. It should stick pretty well, due to the sloppy mayo mix you just slathered on just a second ago. Add some fresh ground pepper and we're almost done.
Squeeze some fresh lime juice on your cheesy/mayo/pepper covered corn. *Thanks to the rockstar for being my lovely lime squeezing hand model. Fabulous job daaaahling!
Eat! It get's messy, so I wouldn't recommend this for a first date type of meal. I'm just saying.
And be sure NOT to throw your awesome raspberry/huckleberry dessert onto the kitchen floor.
Unless you have a dog to clean up the aftermath.
Over and out.
